 Cod Fish With Cream 

Ingredients 

6 cod fish fillets

3 Tbs olive oil 

8 potatoes 

3 onions sliced 

2 cloves  of garlic diced

4  roma tomatoes sliced, peeled and seedless 

1 package cream cheese 

1 cup of heavy whipped cream 

 Green olives sliced

Spices for seasoning, salt, paprica, nutmeg and black pepper 

1 package of potato sticks


Directions 

Cook potatoes and mashed them, reserve.

Cook the onions and garlic with olive oil, add the Cod Fish fillets. Add spices and green olives. Continue cooking until the fish flakes apart.

Remove the pan from heat.

In a serving dish that can go to the oven put first the mashed potatoes, then the Cod Fish.  

Mix cream cheese with cream, then pour this mixture over everything. 

Put in the oven to broil 😋

When serving add some potatoes sticks for garnish.


Sweet Potato Bread

Ingredients  11/2 lb LOAF

1 cup cooked, mashed sweet potatoes, you may use canned if  no sugar, no syrup added or reduce the sugar 

1/2 cup milk

3 tbsp butter 

3 tbsp sugar

1 1/2 tsp salt

3 cups bread flour or 21/2 cup bread flour + 1 cup almond flour 

1  small package yeast 


Method

Put ingredients in bread pan in order suggested by your bread machine instructions. Set for whole wheat bread, medium crust😋

Sweet Potato Salad-Maria Berti
4 large sweet potatoes
2 T olive oil
Freshly ground pepper
Kosher salt
1/2 C figs
1/2 C walnuts
1/2 C crumbled feta
1/2 C freshly chopped green onion

For the dressing: reduced balsamic vinegar

Directions:
Preheat the oven to 430° F. Dice sweet potatoes and season them with salt and black pepper and oil.  On a large baking sheet, bake for 25 minutes. Let cool. Toss sweet potatoes with dressing, walnuts, figs feta ant green onions. Serve warm or at room temperature.

Alfredo Pasta: Karina Florez
INGREDIENTS
3 tbsp butter unsalted
1 cup milk
1/2 cup parmesan cheese
Salt and pepper to taste
2 tbsp fresh parsley chopped
1 garlic
1 Tub cream cheese
500 gr pasta
Ham cut in square (optional)

INSTRUCTIONS
cook the pasta as usual.

SAUCE
1) Melt the butter in a large skillet over medium high heat. Add the garlic and cook until fragant, like a 30 sec.

2) Pour the milk and add parmesan cheese and cream cheese in pieces and stir consistently to avoid burning On the bottom of the pan.

3) Turn the head down to medium and seasoning  with pepper and salt. Take care with the salt, because the parmesan cheese is too salty.
If you decide cook with ham, is the moment to pour in the sauce and mix Like a 2-3 min.

4) Remove the pan from  the heat and mix in the cooked pasta until the sauce begins to thicken.

Garnish with parsley and serv.

ADVICE:
It is recommended to eat at the moment, but if you decide eat it later, to keep it CREAMY, when you heat again, you can pour a little milk and mix.

Cornbread: Paola Gonzalez
• 1 cup all-purpose flour
• 1 cup yellow cornmeal
• ⅔ cup white sugar
• 1 teaspoon salt
• 3 ½ teaspoons baking powder
• 1 egg
• 1 cup milk
• ⅓ cup vegetable oil

• Step 1 Preheat oven to 400 degrees F (200 degrees C). Spray or lightly grease a 9 inch round cake pan.
• Step 2 In a large bowl, combine flour, cornmeal, sugar, salt and baking powder. Stir in egg, milk and vegetable oil until well combined. Pour batter into prepared pan.
• Step 3 Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

2 tablespoons lemon juice
1 cup chopped celery
2/3 cup mayonnaise
1/2 cup pecans
